This course teaches QA and sanitation personnel how to swab equipment and food-contact surfaces to verify that cleaning has removed allergenic residue before a changeover to an allergen-free product. It focuses on the two main tools used in practice: quantitative ELISA testing, typically used to validate a cleaning procedure, and rapid lateral flow devices, used for routine day-to-day verification.
The food safety driver is allergen cross-contact: shared equipment and production lines are a well-documented pathway for allergenic proteins to end up in a product where they aren't declared on the label. Surface swabbing after cleaning is the standard method facilities use to confirm that a changeover cleaning procedure actually worked, rather than relying on a visual "looks clean" check alone.
This course is built for QA technicians and sanitation staff who perform post-cleaning verification swabs ahead of allergen changeovers, and for QA supervisors who review and approve swab results before releasing a line for production.
After completing this course, learners will know how to select swab locations based on risk (equipment contact surfaces, hard-to-clean areas, shared tooling), correctly perform a swab using a lateral flow device and read results within the manufacturer's specified window, understand when a full ELISA validation is warranted instead of a routine lateral flow check, and know what to do — including re-cleaning and re-testing — when a swab indicates allergen residue is still present.
