About this course
Cleaning and Sanitizing Basics teaches the distinction that trips up a lot of new employees: cleaning removes visible soil and food residue, while sanitizing reduces microbial contamination on an already-clean surface to safe levels. The course covers proper sequencing (clean before sanitize, never the reverse), correct chemical concentrations and contact times, safe chemical handling and storage, and why sanitation records must be completed accurately.
Sanitation is one of the prerequisite programs required under the FDA's Current Good Manufacturing Practice regulations in 21 CFR Part 117, which require food-contact surfaces to be cleaned and sanitized as necessary to protect against contamination. Sanitation failures — inadequate cleaning of equipment, cross-contamination from improperly stored chemicals, or environmental pathogens like Listeria establishing themselves in hard-to-clean areas — are a leading cause of recalls and one of the most frequently cited issues in FDA inspection observations (Form 483s).
This course is intended for all employees, with particular depth for sanitation crews, but also for production employees who perform changeover cleaning or work near food-contact surfaces.
After completing this course, learners will understand the difference between cleaning and sanitizing, know correct chemical use and dilution practices, understand allergen and cross-contact considerations during sanitation, and be able to properly document completed sanitation activities.
