About this course
Storage Practices and Warehouse GMP focuses specifically on the warehousing and holding requirements within the FDA's Current Good Manufacturing Practice regulations — proper stock rotation, temperature and humidity control, physical segregation of allergens, chemicals, and non-food items, pallet and floor storage practices, and pest prevention in storage areas.
Warehousing is explicitly addressed in 21 CFR Part 117, which requires storage and transportation of food under conditions that protect it against contamination and against deterioration. A warehouse is not a passive holding space — improper segregation can cause allergen cross-contact, poor rotation can lead to expired or spoiled product reaching production, and gaps in pest exclusion or sanitation in storage areas are a common source of inspection findings.
This course is intended for all employees working in warehouse, shipping, and receiving roles, and is also relevant to production employees who pull materials from storage.
After completing this course, learners will understand proper stock rotation methods (FIFO/FEFO), correct segregation of allergens and chemicals from food product, temperature and pest control expectations in storage areas, and how to identify and report damaged, contaminated, or out-of-date stock.
