About this course

This course covers environmental monitoring programs (EMPs) — the systematic sampling of a facility's surfaces, equipment, and air handling areas to detect pathogens, most notably Listeria monocytogenes, before they can contaminate product. It focuses on why EMPs exist, how they're structured, and what a facility does with the results.

The regulatory and food-safety driver is well established: FDA's Preventive Controls for Human Food rule (21 CFR Part 117) expects facilities that produce ready-to-eat foods exposed to the environment to have monitoring in place to verify that sanitation and pathogen controls are working. FDA's guidance on controlling Listeria monocytogenes in ready-to-eat foods describes environmental monitoring as essential for identifying where a pathogen may be harboring in the plant, verifying that control measures are effective, and finding opportunities to improve those controls before an outbreak or recall occurs — because contamination is far more often traced to niches in the processing environment than to raw ingredients alone.

This course is intended for QA managers and food safety team members responsible for designing, maintaining, or reviewing an EMP, particularly at facilities that manufacture ready-to-eat products.

After completing this course, learners will understand why RTE facilities are held to a higher environmental monitoring standard, be able to identify high-risk zones and sampling sites within a facility using a risk-based approach, know how to interpret a positive environmental result and what "seek and destroy" investigation means in practice, and understand how monitoring data feeds back into sanitation and preventive control programs.
