About this course
This course is the hands-on companion to a facility's environmental monitoring program: it teaches the specific technique of collecting environmental swab samples correctly, so the data those samples produce is trustworthy. Poor swabbing technique is a common and avoidable source of false negatives, which can mask a real problem in the plant.
Environmental monitoring programs are typically organized around zones of increasing distance from the product — from direct food-contact surfaces, to non-food-contact surfaces near the line, to more distant surfaces and drains, to areas outside the immediate production area — a structure that helps a facility prioritize where a pathogen is most dangerous versus where it's an early warning sign. Collecting a valid sample from each zone requires aseptic technique, correct swab moistening and pressure, proper site selection (including hard-to-clean areas like equipment framework, seams, and drains), and careful handling to preserve chain of custody from the plant floor to the lab.
This course is designed for QA technicians and sanitation staff who physically perform environmental swabbing as part of a routine monitoring schedule.
After completing this course, learners will be able to select appropriate sites within each monitoring zone, correctly perform aseptic swabbing technique to avoid cross-contaminating samples, properly label, package, and maintain chain of custody for samples going to a lab, and recognize technique errors that could produce an unreliable result.
